A rich and creamy pasta dish with succulent shrimp and colorful vegetables, reminiscent of Mardi Gras celebrations.

Ingredients

  • 8 oz fettuccine or linguine pasta
  • 1 lb shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 onion, diced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 tbsp Cajun seasoning
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese
  • Green onions, chopped (for garnish)

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, sautéing until soft, about 5 minutes.
  3. Stir in the minced garlic and shrimp, cooking until the shrimp turn pink, about 3-4 minutes.
  4. Pour in the chicken broth and heavy cream, then sprinkle in the Cajun seasoning. Stir until all ingredients are well combined and simmer for 5 minutes.
  5. Add the cooked pasta to the skillet, tossing everything to combine and soak in that delicious sauce.
  6. Stir in the grated Parmesan cheese until it melts into the creamy sauce.
  7. Season with salt and pepper to taste, adjusting as desired for the perfect flavor.
  8. Garnish generously with chopped green onions and serve immediately for a steaming bowl of joy!

Notes

For variations, add vegetables like zucchini or spinach, or substitute shrimp with sautéed mushrooms for a vegetarian option.
