A warm and hearty white bean soup perfect for chilly evenings, infused with flavors of turkey bacon and hearty vegetables.

Ingredients

  • 2 cups dried white beans, soaked overnight
  • 4 cups vegetable broth
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 4 slices turkey bacon, chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat until it shimmers invitingly.
  2. Add the turkey bacon and cook until crispy. Remove and set aside, leaving the drippings in the pot.
  3. Sauté the diced onion, chopped carrots, and chopped celery until softened, about 5-7 minutes.
  4. Stir in the minced garlic and dried thyme, cooking for an additional minute.
  5. Drain the soaked beans and add them to the pot. Pour in the vegetable broth and add the bay leaf.
  6. Raise the heat and bring the mixture to a boil. Once boiling, reduce the heat and let it simmer gently.
  7. Simmer for about 1 hour or until the beans are tender and creamy.
  8. Remove the bay leaf, season with salt and pepper to taste, and stir in the crispy turkey bacon.
  9. Scoop the soup into hearty bowls and serve hot.

Notes

Serve with crusty artisan bread or a fresh green salad. For added flavor, swirl in olive oil or top with Parmesan cheese.
