A quick and comforting one-pot pasta dish that’s creamy and packed with vibrant flavors.

Ingredients

  • 6 ounces pasta (your choice)
  • 2 cups vegetable broth or chicken broth
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach or other greens
  • 1/2 cup cream or milk
  • Salt and pepper to taste
  • Optional: protein of choice (chicken, shrimp, etc.)

Instructions

  1. Combine ingredients: In a large pot, combine the pasta, broth, cherry tomatoes, and spinach.
  2. Bring to a boil: Bring the mixture to a boil, then reduce to a simmer. Cook for about 10-12 minutes, or until the pasta is tender.
  3. Stir in cream: Stir in the cream or milk, and season with salt and pepper to taste.
