A comforting and hearty bean soup that captures the essence of cozy meals, made creamy without actual cream.

Ingredients

  • 2 tablespoons olive oil
  • 1 chopped onion
  • 2 cloves garlic, minced
  • 1 diced carrot
  • 1 diced celery stalk
  • 1 cup diced turkey bacon
  • 2 cups soaked white beans
  • 4 cups vegetable broth
  • 1 bay leaf
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Sauté the base veggies: Heat olive oil, add onion, garlic, carrot, and celery. Cook until softened, about 5-7 minutes.
  2. Add the turkey bacon: Stir in diced turkey bacon and cook for about 3 minutes.
  3. Incorporate the beans: Drain and rinse soaked white beans, then add to the pot.
  4. Pour in the broth: Add vegetable broth, bay leaf, and thyme. Bring to a boil then simmer for 1 hour.
  5. Blend for creaminess: Remove bay leaf and blend half of the soup until creamy.
  6. Season it up: Return to pot and season with salt and pepper to taste.
  7. Serve hot: Ladle into bowls and enjoy!

Notes

This soup can be served with crusty bread or a fresh salad. Leftovers can be stored for up to 4 days in the refrigerator or frozen for longer storage.
