A comforting one-pan dish featuring honey-infused BBQ chicken and rice, perfect for weeknight dinners.

  • 1 cup rice
  • 1 cup BBQ sauce
  • 1 cup chicken broth
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • Salt and pepper to taste
  • Optional: green onions for garnish

Instructions

  1. Heat the Pan: In a large pan, heat a drizzle of oil over medium heat.
  2. Sauté the Vegetables: Add the chopped onion and bell pepper, cooking until softened, about 3-4 minutes.
  3. Season the Chicken: Push the vegetables to the side of the pan and add the chicken breasts, generously seasoning them with salt and pepper.
  4. Brown the Chicken: Let the chicken brown for about 2-3 minutes on each side.
  5. Combine the Ingredients: Pour in the rice, BBQ sauce, and chicken broth. Stir to combine everything.
  6. Bring It to a Boil: Raise the heat slightly and bring the mixture to a boil.
  7. Simmer Away: Reduce the heat to low, cover the pan, and let it simmer for 20 minutes.
  8. Serve It Up: Once the rice is tender and the chicken is cooked through, serve hot, garnished with green onions if desired.
