A comforting dish combining succulent chicken, creamy Parmesan, and perfectly cooked rice, all made in one pan.

  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 cup rice (preferably long grain)
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the chicken pieces and season with salt and pepper. Sauté until browned, about 5 to 7 minutes.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Add the rice to the pan and stir to combine.
  5. Pour in the chicken broth and heavy cream, bringing the mixture to a boil.
  6. Reduce heat to low, cover, and let it simmer for about 20 minutes or until the rice is cooked and the liquid is absorbed.
  7. Stir in the grated Parmesan cheese until melted and creamy.
  8. Garnish with fresh parsley before serving.

Notes

This dish pairs well with a crisp salad or roasted vegetables. To lighten the dish, use half-and-half instead of heavy cream.
