A simple yet flavorful one-pan dish that combines Cajun-spiced chicken and rice, perfect for busy weeknights.

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon Cajun seasoning
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 can diced tomatoes
  • Salt and pepper to taste
  • Green onions, for garnish

Instructions

  1. Season the chicken breasts with Cajun seasoning, salt, and pepper.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Add the seasoned chicken to the skillet and cook until browned on both sides. Remove and set aside.
  4. Toss in the diced onion, chopped bell pepper, and minced garlic. Sauté until softened.
  5. Stir in the rice and allow it to toast for 1-2 minutes.
  6. Pour in the chicken broth and diced tomatoes, bringing everything to a gentle simmer.
  7. Return the chicken to the skillet, cover, and reduce heat to low. Cook until rice is tender.
  8. Garnish with chopped green onions before serving.
