Deliciously moist muffins combining ripe bananas and Nutella, perfect for breakfast or a sweet snack.

Ingredients

Scale
  • 2–3 ripe bananas, mashed (about 1 cup)
  • 1/2 cup sugar (white or brown)
  • 1/3 cup vegetable oil (or melted butter)
  • 1 egg
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup Nutella (plus more for topping/swirl)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Combine the mashed bananas, sugar, vegetable oil (or melted butter), egg, and vanilla extract in a large bowl. Mix well until fully incorporated.
  3. Whisk together the flour, baking soda, baking powder, and salt in another bowl. Gradually add the dry ingredients to the banana mixture, stirring until just combined.
  4. Fold in the Nutella, reserving some for topping or swirling if desired.
  5. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  6. Add dollops of additional Nutella on top and swirl with a toothpick if desired.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow to cool before serving.
