A decadent, creamy mousse layered over a crunchy graham cracker crust, bursting with chocolate and peanut butter flavors, no oven required.

  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup creamy peanut butter
  • 1 cup powdered sugar
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream (for ganache)

Instructions

  1. Create the Graham Cracker Crust: In a medium bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
  2. Make the Peanut Butter Mousse: In another bowl, beat together peanut butter and powdered sugar until smooth. In a separate bowl, whip 1 cup of heavy cream until stiff peaks form, then gently fold it into the peanut butter mixture.
  3. Assemble the Mousse Layer: Spread the peanut butter mousse over the graham cracker crust and smooth the top.
  4. Prepare the Chocolate Ganache: For the ganache, heat 1/2 cup of heavy cream in a small saucepan until it begins to simmer. Remove from heat and add the chocolate chips, stirring until melted and smooth.
  5. Top with Ganache: Pour the chocolate ganache over the peanut butter layer and spread it evenly.
  6. Chill and Serve: Refrigerate for at least 4 hours or until set. Serve chilled and enjoy!

Notes

For a fun twist, serve slices alongside fresh berries. Store leftovers covered in the refrigerator for up to 3 days.
