A delightful twist on classic meatloaf that combines rich Swiss cheese, earthy mushrooms, and smoky bacon for a comforting family meal.

Ingredients

  • 1 pound ground beef
  • 1/2 pound ground pork
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chopped onions
  • 1 cup chopped mushrooms
  • 4 slices bacon cooked and crumbled
  • 1 cup shredded Swiss cheese
  • 2 eggs
  • 1 tbsp Worcestershire sauce
  • 1 tbsp ketchup
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup ketchup topping

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the bacon until crispy, then crumble it into bite-sized pieces.
  3. Sauté the chopped onions and mushrooms in the bacon drippings until they’re softened.
  4. Combine the ground beef, ground pork, breadcrumbs, milk, grated Parmesan cheese, crumbled bacon, sautéed onions and mushrooms, shredded Swiss cheese, eggs, Worcestershire sauce, ketchup, garlic powder, dried thyme, salt, and black pepper in a large bowl.
  5. Transfer the mixture to a greased baking dish and shape it into a loaf.
  6. Spread the ketchup topping evenly over the meatloaf.
  7. Bake in the preheated oven for 60-70 minutes or until the internal temperature reaches 160°F (70°C).
  8. Let the meatloaf rest for 10 minutes before slicing.

Notes

Serve with mashed potatoes, salad, or veggies. Store leftovers in the fridge for 3-4 days or freeze for up to 3 months.
