A comforting pot roast that simmers all day with tender chuck roast, tangy pepperoncini, and a rich, buttery sauce.

Ingredients

  • 3–4 lb chuck roast
  • 1 packet ranch seasoning mix
  • 1 packet au jus gravy mix
  • 1/2 cup unsalted butter
  • 6–8 pepperoncini peppers
  • 2 tbsp pepperoncini juice (optional)
  • 1/4 cup water or beef broth (optional)

Instructions

  1. Place the chuck roast in the slow cooker.
  2. Sprinkle on the ranch seasoning and au jus mix.
  3. Add the pepperoncini peppers around the meat.
  4. Top with the unsalted butter.
  5. Add optional pepperoncini juice and water or beef broth.
  6. Cover and cook on LOW for 8 to 10 hours.
  7. Shred the beef in the sauce after cooking.
  8. Serve warm with your favorite sides.

This pot roast improves in flavor as it sits, making it ideal for meal prep. Adjust cooking time based on your slow cooker’s settings.
