Ingredients

  • 1/2 cup unsalted butter, chilled and cubed
  • 2 tbsp powdered sugar
  • 1/4 tsp salt
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/4 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 1/4 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the flour, chilled cubed butter, powdered sugar, and salt in a food processor and pulse until it resembles coarse crumbs.
  3. Press the dough into mini tartlet pans evenly.
  4. Bake the crusts for 10 minutes until lightly golden.
  5. Whisk together granulated sugar, eggs, fresh lemon juice, lemon zest, and heavy cream until smooth.
  6. Pour the filling into the pre-baked tartlet shells.
  7. Return the tartlets to the oven and bake for another 12-15 minutes until set.
  8. Let the tartlets cool completely before serving.
