  • 4 cups chicken broth
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 lemon, juiced
  • 1/4 cup fresh basil, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp turmeric

Instructions

  1. Heat the olive oil in a large pot over medium heat until it shimmers.
  2. Add garlic, onion, carrots, and celery to the pot. Sauté for 5 minutes, until the onions become translucent and fragrant.
  3. Cook the diced chicken, stirring occasionally, until it is no longer pink, about 5–7 minutes.
  4. Pour in the chicken broth and bring to a rolling boil.
  5. Simmer the soup on low heat for 20 minutes, allowing the flavors to meld beautifully.
  6. Add the lemon juice, fresh basil, salt, black pepper, and turmeric. Simmer for another 5 minutes before serving.
