A quick and comforting chicken stew perfect for busy weeknights, packed with flavor and nutrients.

  • 2 lbs chicken thighs (bone-in, skin-on)
  • 1 tbsp olive oil
  • 1 onion, diced
  • 3 carrots, chopped
  • 3 celery stalks, sliced
  • 4 garlic cloves, minced
  • 6 cups chicken broth
  • 2 bay leaves
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Brown the chicken thighs for 5 minutes per side. Remove and set aside.
  3. Sauté the onion, carrots, and celery for 5 minutes, allowing the ingredients to release their natural sweetness.
  4. Add the garlic and cook for 1 minute, until fragrant and golden.
  5. Combine the chicken with the pot. Add broth, bay leaves, thyme, and rosemary.
  6. Simmer for 30 minutes until the chicken is tender and fully cooked.
  7. Shred the chicken, discard bones, and return the meat to the pot.
  8. Finish the dish by seasoning with salt and pepper. Serve hot, and enjoy the cozy warmth!
