35-Minute Carrot Cake Cheesecake Bars

A delightful harmony of carrot cake and creamy cheesecake, perfect for any occasion.

Ingredients

  • 1 cup grated carrots
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1/2 cup melted butter
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 large egg

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 baking pan with parchment paper.
  2. In a mixing bowl, combine the flour, granulated sugar, brown sugar, cinnamon, nutmeg, and salt. Stir well until evenly distributed.
  3. Slowly stir in the melted butter until the mixture becomes crumbly.
  4. Take half of this crumb mixture and press it firmly into the bottom of your prepared baking pan.
  5. In a separate bowl, beat together the cream cheese, powdered sugar, vanilla extract, and egg until smooth and creamy.
  6. Spread the cream cheese mixture evenly over the crumb base in the pan.
  7. Top the cream cheese layer with the grated carrots, spreading them out evenly.
  8. Finish by sprinkling the remaining crumb mixture over the carrots.
  9. Bake in the preheated oven for 30-35 minutes until the center is set and a toothpick comes out clean.
  10. Allow the bars to cool completely in the pan before lifting them out and cutting them into squares.

Notes

Store leftovers in an airtight container in the refrigerator for up to 5 days. You can also freeze the bars for up to 3 months.
