Delicious Mint Chocolate Cupcakes infused with peppermint and topped with rich chocolate frosting, perfect for any occasion.

  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 cup sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract
  • Chocolate frosting
  • Mint leaves for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. Mix together the flour, cocoa powder, sugar, baking powder, baking soda, and salt in a large bowl.
  3. Add softened butter, eggs, buttermilk, vanilla extract, and peppermint extract to the dry ingredients. Mix until well blended.
  4. Fill each cupcake liner about 2/3 full with batter.
  5. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  6. Allow cupcakes to cool completely before frosting with chocolate frosting.
  7. Garnish with mint leaves before serving.

Notes

For a richer chocolate flavor, consider adding chocolate chips to the batter or using dark chocolate cocoa powder.
