Delightful mini cheesecakes bursting with strawberry flavor, perfect for summer gatherings.

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 16 oz cream cheese, softened
  • 1/2 cup sugar
  • 2 tsp vanilla extract
  • 2 eggs
  • 1/2 cup strawberry puree
  • 1/4 cup powdered sugar

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Line a mini muffin tin with paper liners.
  3. Combine 1 1/2 cups of graham cracker crumbs with 1/4 cup of melted butter.
  4. Press the graham cracker mixture firmly into the bottom of each liner.
  5. Beat together 16 oz of softened cream cheese, 1/2 cup of sugar, and 2 tsp of vanilla extract until smooth.
  6. Add the 2 eggs one at a time to the cream cheese mixture.
  7. Divide the batter in half into two separate bowls.
  8. Mix in 1/2 cup of strawberry puree and 1/4 cup of powdered sugar to one half of the batter.
  9. Spoon the vanilla and strawberry batters alternately into the lined muffin tins.
  10. Bake for 15-18 minutes or until set.
  11. Remove from the oven and allow the mini cheesecakes to cool completely on a wire rack.

Notes

Serve these cheesecake bites with fresh berries or a dollop of whipped cream. Store any leftovers in an airtight container in the refrigerator for up to 5 days.
