  • 1 cup crushed pineapple, drained
  • 1/4 cup brown sugar
  • 1/2 cup graham cracker crumbs
  • 1/4 cup butter, melted
  • 8 oz cream cheese, softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 2 eggs

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Mix the crushed pineapple with brown sugar in a bowl.
  3. Combine the graham cracker crumbs and melted butter in another bowl.
  4. Press the crumb mixture into muffin liners in a muffin tin.
  5. Beat the softened cream cheese, sugar, and vanilla until smooth.
  6. Add the eggs one at a time, mixing until just incorporated.
  7. Pour the cream cheese mixture over the crusts.
  8. Top each cheesecake with a spoonful of the pineapple mixture.
  9. Bake for 20-25 minutes, until set.
