Delicious and easy-to-make mini mocha cheesecake bites with a graham cracker crust, perfect for any sweet craving.

Ingredients

  • 1 cup graham cracker crumbs
  • 2 tbsp melted butter
  • 8 oz cream cheese, softened
  • 1/4 cup sugar
  • 1 tsp vanilla extract
  • 1 tbsp instant coffee granules
  • 1 tbsp cocoa powder
  • 1/2 cup heavy cream

Instructions

  1. Preheat your oven to 325°F.
  2. Mix graham cracker crumbs with melted butter until resembling wet sand. Press into mini muffin tins.
  3. Bake the crust for 5 minutes, then let cool.
  4. Beat cream cheese, sugar, and vanilla extract until smooth.
  5. Dissolve instant coffee granules in hot water, then blend into the cream cheese mixture.
  6. Add cocoa powder and beat until well combined.
  7. Whip heavy cream until stiff peaks form.
  8. Fold whipped cream into cream cheese mixture gently.
  9. Spoon filling into cooled crusts.
  10. Chill for at least 2 hours to set.

Notes
