These mini date and nut balls are a healthy and delicious energy booster, perfect for satisfying afternoon cravings.

Ingredients

  • 1 cup dates, pitted
  • 1/2 cup almonds
  • 1/2 cup walnuts
  • 1 tbsp coconut oil
  • 1 tsp cinnamon
  • 1/4 cup shredded coconut, for rolling

Instructions

  1. Blend the pitted dates, almonds, walnuts, coconut oil, and cinnamon in a food processor until sticky and well-combined.
  2. Take a spoonful of the mixture and roll it between your hands to form small balls, about an inch in diameter.
  3. Spread the shredded coconut onto a plate and roll each mini ball in it until evenly coated.
  4. Place the coated balls onto a tray and chill in the refrigerator for at least 30 minutes before serving.

Notes

These mini balls can be stored in an airtight container in the fridge for up to one week, or frozen for up to three months.
