A colorful and flavorful salad featuring macaroni, roasted corn, and black beans, perfect for summer gatherings.

Ingredients

  • 2 cups macaroni
  • 1 cup roasted corn
  • 1 can black beans, rinsed and drained
  • 1 bell pepper, diced
  • 1 cup mayonnaise
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Optional: cooked chicken or ham for protein

Instructions

  1. Cook the macaroni according to the package instructions. Once done, drain it well and let it cool.
  2. Combine in a large bowl the cooled macaroni, roasted corn, black beans, and diced bell pepper.
  3. Whip up the dressing by combining mayonnaise, lime juice, chili powder, salt, and pepper in a separate bowl.
  4. Dress the macaroni mixture with the creamy dressing and stir until well combined.
  5. Add cooked chicken or ham for extra protein if desired.
  6. Chill the salad in the refrigerator for at least 30 minutes before serving.

Notes

This salad can be customized with different proteins and veggies. Store leftovers in an airtight container for 3-4 days.
