Ingredients
Scale
1 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup heavy cream
1/4 cup powdered sugar
1 cup chocolate chips
Instructions
Preheat Your Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Cream the Butter and Sugar: In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
Add the Eggs and Vanilla: Beat in the eggs one at a time, then stir in the vanilla extract.
Mix Dry Ingredients: In another bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
Drop the Dough: Drop spoonfuls of dough onto the prepared baking sheet and bake for 12-15 minutes, or until the edges are lightly golden.
Cool the Cookies: While the cookies cool, prepare the vanilla filling by whipping the heavy cream with powdered sugar until stiff peaks form.
Assemble the Cookies: Once the cookies are cool, spread or pipe the vanilla filling onto half of the cookies and sandwich them with the other half.
Melt the Chocolate: Melt the chocolate chips in a microwave or double boiler and drizzle over the assembled cookies.
Allow to Set: Allow the chocolate to set before serving.
