These cookies capture the classic flavors of Boston cream pie in a bite-sized twist with a creamy filling and a rich chocolate topping.

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 cup chocolate chips

Instructions

  1. Preheat Your Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream the Butter and Sugar: In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the Eggs and Vanilla: Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Mix Dry Ingredients: In another bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
  5. Drop the Dough: Drop spoonfuls of dough onto the prepared baking sheet and bake for 12-15 minutes, or until the edges are lightly golden.
  6. Cool the Cookies: While the cookies cool, prepare the vanilla filling by whipping the heavy cream with powdered sugar until stiff peaks form.
  7. Assemble the Cookies: Once the cookies are cool, spread or pipe the vanilla filling onto half of the cookies and sandwich them with the other half.
  8. Melt the Chocolate: Melt the chocolate chips in a microwave or double boiler and drizzle over the assembled cookies.
  9. Allow to Set: Allow the chocolate to set before serving.

Notes

These cookies are best enjoyed fresh but can be stored in an airtight container for up to three days.
