Ingredients

  • 8 sheets phyllo dough
  • 2 cups fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon Mediterranean herbs (such as oregano and thyme)
  • 1 egg (for egg wash, optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Sauté the minced garlic in olive oil until fragrant.
  3. Wilt the chopped spinach, then mix in feta, salt, pepper, and herbs.
  4. Lay out phyllo sheets and brush each layer with olive oil.
  5. Place a spoonful of filling at one end of the phyllo sheet and fold over.
  6. Cut the sheet into strips or squares.
  7. Arrange on a baking sheet and brush with egg wash if using.
  8. Bake for 15-20 minutes until golden brown and crisp.
