A scrumptious blend of cheesy goodness and bold flavors with creamy feta, rich mozzarella, fresh spinach, and sautéed red onions.

Ingredients

  • 1 cup fresh Spinach
  • ½ cup Feta cheese, crumbled
  • 1 cup Mozzarella cheese, shredded
  • 1 Red onion, chopped
  • 4 Tortillas (flour or whole wheat)
  • 2 tablespoons Olive oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Heat the olive oil in a pan over medium heat until shimmering gently.
  2. Add chopped red onion to the pan. Sauté until translucent and fragrant, about 3-4 minutes.
  3. Toss in the fresh spinach with salt and pepper. Stir until it wilts down, about 2 minutes.
  4. Lay one tortilla in the pan, letting it soak up the flavors.
  5. Sprinkle crumbled feta and shredded mozzarella on one half of the tortilla.
  6. Top with sautéed spinach and onions. Fold the tortilla in half.
  7. Cook until each side is golden and crispy, about 2-3 minutes per side.
  8. Transfer to a cutting board, cut into wedges, and serve hot.

Notes

Serve with tzatziki or a simple Greek salad. Leftovers can be stored in the fridge for up to 3 days.
