A vibrant and wholesome bowl filled with grilled chicken, fresh veggies, feta, and quinoa, dressed with a tangy lemon and olive oil dressing.

Ingredients

  • 1 cup quinoa
  • 2 cups water or chicken broth
  • 2 grilled chicken breasts, sliced
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, diced
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Rinse quinoa under cold water. In a medium pot, combine quinoa and water or chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until the liquid is absorbed. Fluff with a fork and let cool.
  2. Combine the grilled chicken, cucumber, bell pepper, cherry tomatoes, red onion, and cooled quinoa in a large bowl.
  3. Whisk together the olive oil, lemon juice, salt, and pepper in a small bowl. Pour over the quinoa mixture and toss gently to combine.
  4. Top with crumbled feta cheese and garnish with fresh parsley. Serve immediately or store in the fridge for meal prep.

Notes

This bowl can be customized with different vegetables or protein options. Try adding nuts for a crunch or herbs for more flavor.
