Ingredients

Scale
  • 2 cups mixed olives (green and black)
  • 200 grams feta cheese, cut into cubes
  • 3 cloves garlic, thinly sliced
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon dried oregano
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 teaspoon freshly ground black pepper
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme

Instructions

  1. Prepare the Marinade: In a small bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, crushed red pepper flakes, and black pepper to form a smooth marinade.
  2. Combine the Base Ingredients: Place the mixed olives and feta cheese cubes in a medium-sized airtight container.
  3. Coat the Olives and Feta: Pour the marinade evenly over the olives and feta, ensuring each piece is well-coated in those beautiful flavors.
  4. Add Fresh Herbs: Tuck in the rosemary and thyme sprigs for an aromatic touch.
  5. Seal and Marinate: Seal the container tightly and refrigerate for at least 120 minutes. For the best results, let it sit overnight for maximum flavor infusion.
