A delightful bowl of roasted sweet potatoes and tender chicken, coated in a maple Dijon sauce, perfect for chilly evenings.

Ingredients

  • 4 cups sweet potatoes, cubed
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 pound chicken breast, diced
  • 2 tablespoons Dijon mustard
  • 2 tablespoons pure maple syrup
  • 1 tablespoon apple cider vinegar
  • 2 cups fresh spinach leaves
  • Chopped fresh parsley for garnish

Instructions

  1. Preheat your oven to a lovely 400°F (200°C).
  2. Toss the cubed sweet potatoes with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper.
  3. Spread the seasoned sweet potatoes on a lined baking sheet in a single layer and roast for 25-30 minutes.
  4. Heat a large skillet over medium-high heat and add the diced chicken, seasoning it with salt and pepper.
  5. Cook for 6-8 minutes until the chicken is cooked through and browned.
  6. Whisk together the Dijon mustard, maple syrup, apple cider vinegar, olive oil, salt, and pepper in a small bowl.
  7. Return the chicken to the skillet and pour the maple Dijon sauce over it, stirring to coat.
  8. Assemble the bowls by dividing roasted sweet potatoes and maple Dijon chicken evenly among serving bowls, adding fresh spinach leaves.
  9. Drizzle any remaining sauce over the bowls and garnish with chopped parsley.
