A delightful dessert featuring soft, glutinous rice soaked in creamy coconut milk, paired with sweet ripe mangoes.

Ingredients

  • 1 cup sticky rice (glutinous rice), rinsed until water runs clear
  • 46 hours soaking time (soak the rice in water)
  • 1.5 cups coconut milk (for sauce and drizzling)
  • 0.5 cup sugar (adjust based on sweetness preference)
  • 0.25 teaspoon salt
  • 2 ripe mangoes, sliced (choose sweet and soft mangoes)
  • To taste: sesame seeds or mung beans (optional garnish)

Instructions

  1. Rinse the sticky rice under cold water until the water runs clear. Soak the rice in fresh water for 4-6 hours.
  2. Drain the soaked rice and transfer it to a steamer lined with cheesecloth. Steam for about 20 minutes until translucent and tender.
  3. Combine 1.5 cups of coconut milk with 0.5 cup sugar and 0.25 teaspoon salt in a saucepan. Heat over medium heat, stirring until the sugar dissolves.
  4. Transfer the steamed rice to a bowl and pour about 1 cup of the warm coconut sauce over it. Stir gently and cover with a towel for 15 minutes.
  5. Slice the ripe mangoes into thin pieces.
  6. Serve by spooning sticky rice onto plates, adding mango slices, and drizzling with remaining coconut sauce. Sprinkle sesame seeds or mung beans on top.

Notes

Use good quality coconut milk for the best flavor. Adjust the sweetness to your taste preference.
