A decadent cheesecake with a buttery crumb crust, velvety cream cheese filling, rich caramel, and glossy chocolate ganache.

Ingredients

  • 1 ½ cups digestive biscuits, crushed
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup sugar
  • 1 cup sour cream
  • 2 teaspoons vanilla extract
  • 3 large eggs
  • 1 cup caramel sauce
  • 1 cup chocolate ganache

Instructions

  1. Preheat your oven to 325°F (160°C). Grease your 9-inch springform pan lightly.
  2. Combine the crushed digestive biscuits with the melted butter and press them into the bottom of the springform pan.
  3. Beat the softened cream cheese and sugar in a bowl until smooth and silky.
  4. Add sour cream, vanilla extract, and eggs into the cream cheese mixture, mixing until well combined.
  5. Pour the cream cheese mixture over the biscuit base, spreading it evenly.
  6. Bake for 50-60 minutes until the edges are set, but the center has a slight jiggle.
  7. Cool the cheesecake at room temperature, then refrigerate for at least 4 hours or overnight.
  8. Drizzle caramel sauce and chocolate ganache over the chilled cheesecake before serving.

Notes

For a creamier texture, consider baking in a water bath. Store leftovers covered in the refrigerator for up to 5 days.
