  • 1/2 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 graham cracker crust

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Prepare the pistachios by pulsing them in a food processor until finely ground.
  3. Mix the ground pistachios with cream cheese and sugar until smooth.
  4. Blend in lemon juice, lime juice, and vanilla extract; mix well.
  5. Transfer the mixture into the graham cracker crust and smooth the top.
  6. Bake for 50-60 minutes or until the center is set.
  7. Cool completely, then refrigerate for at least 4 hours.
  8. Whip the heavy cream with powdered sugar until soft peaks form.
  9. Spread the whipped cream over the cheesecake and top with cherry pie filling before serving.
