A comforting and delicious fusion of crispy potatoes and seasoned ground beef, topped with fresh veggies and sour cream, perfect for a weeknight meal.

  • 3 large potatoes
  • 1 lb ground beef
  • 1 tbsp taco seasoning
  • 1 cup diced tomatoes
  • 1 cup lettuce, shredded
  • 1/2 cup sour cream
  • 1/2 cup shredded cheese
  • 1/4 cup chopped green onions
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Dice the potatoes into small cubes, season with salt and pepper, and toss with oil. Spread them on a baking sheet.
  3. Roast in the oven for 25-30 minutes until crispy and golden, tossing halfway through for even cooking.
  4. Cook the ground beef over medium heat until browned, breaking it apart with a spatula.
  5. Drain excess fat from the skillet, then stir in the taco seasoning until the beef is well-coated and aromatic.
  6. In large bowls, layer the crispy potatoes, seasoned beef, diced tomatoes, lettuce, and shredded cheese.
  7. Top each bowl with a dollop of sour cream and a sprinkle of green onions.
  8. Serve the bowls hot and enjoy this comforting meal!
