  • 1 pound ground meat (beef, turkey, or chicken)
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or fresh
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 avocado, diced
  • 1 cup salsa
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Begin by scrubbing and dicing your potatoes into small cubes. Then, boil them in salted water until tender, about 10-15 minutes. Once they’re nice and soft, drain and set them aside.
  2. In a large skillet, heat some olive oil over medium heat, then add in your ground meat. Cook until browned and fully cooked through, seasoning it with chili powder, cumin, salt, and pepper to enhance those robust flavors.
  3. Now it’s time to add the black beans and corn to your skillet. Stir everything together and heat through until everything is combined and hot, allowing the spices to coat the beans and corn beautifully.
  4. To assemble the bowls, divide the cooked potatoes into your serving dishes. Top with the flavorful meat mixture, then layer on the shredded cheese, diced avocado, and a generous scoop of salsa.
