Warm, cheesy bites of comfort food, perfect for gatherings and parties.

Ingredients

  • Mini potatoes
  • Cheese (Cheddar or your favorite variety)
  • Bacon (cooked and crumbled)
  • Green onions (chopped)
  • Olive oil
  • Salt
  • Pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Boil the mini potatoes until tender, about 15 minutes.
  3. Cool and prepare the potatoes by removing tops and scooping out the flesh.
  4. Mix the scooped-out potato with cheese, bacon, salt, and pepper.
  5. Fill the potato skins with the cheesy mixture and drizzle olive oil on top.
  6. Bake for about 15-20 minutes until tops are bubbly and golden brown.
  7. Garnish with chopped green onions before serving.

Notes

Can be served with dipping sauces like sour cream or ranch. Store leftovers in an airtight container in the fridge for up to 3 days.
