A warm and hearty cornbread casserole loaded with cheese, bacon, and corn, perfect for gatherings.

  • 1 box cornbread mix
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 can creamed corn
  • 1 cup milk (Regular or almond milk can be used)
  • 2 whole eggs
  • 1 cup cooked and crumbled bacon or sausage (optional)
  • 1 cup diced bell peppers or onions (optional)
  • To taste: Salt and pepper
  • 1/2 cup sour cream (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Gather all your ingredients.
  3. Combine the eggs and milk in a large mixing bowl, then mix in the creamed corn and sour cream (if using).
  4. Mix the cornbread mix with salt and pepper in another bowl.
  5. Combine the wet and dry mixtures until just combined.
  6. Add the cheese, bacon or sausage, and bell peppers or onions (if using).
  7. Transfer the batter into a greased baking dish.
  8. Bake for 30 to 35 minutes until golden brown.
  9. Let it cool for about 10 minutes.
  10. Serve warm and enjoy!

Notes

For extra cheesiness, use a mixture of cheeses. For a vegetarian version, skip the meat and load up on veggies.
