Delightful lemon poppy seed muffins with a creamy texture from cottage cheese, perfect for breakfast or as a snack.

  • 1 cup cottage cheese
  • 1/2 cup sugar
  • 2 large eggs
  • 1/4 cup vegetable oil
  • 1 tablespoon lemon zest
  • 1/4 cup lemon juice
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoons poppy seeds

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Combine the cottage cheese, sugar, eggs, vegetable oil, lemon zest, and lemon juice in a bowl.
  3. Whisk together the all-purpose flour, baking powder, baking soda, salt, and poppy seeds in another bowl.
  4. Add the dry ingredients to the wet mixture, stirring until just combined.
  5. Fill each muffin cup about 2/3 full with the batter.
  6. Bake for 15-20 minutes, or until a toothpick inserted comes out clean.
  7. Cool in the pan for 5 minutes before transferring to a wire rack.

Notes

For added flavor, increase lemon zest; can substitute Greek yogurt for cottage cheese.
