  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 tablespoon dried culinary lavender
  • Zest of 1 lemon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Lemon buttercream frosting for filling

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Creaming together the unsalted butter and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract.
  4. Whisk together the flour, lavender, lemon zest, baking powder, and salt in a separate bowl.
  5. Gradually add the dry ingredients to the wet mixture, mixing until incorporated.
  6. Roll the dough into balls and flatten them slightly.
  7. Bake for 10-12 minutes until edges are golden.
  8. Cool on the baking sheet before transferring to a wire rack.
  9. Spread lemon buttercream between two cookies to form a sandwich.
