A simple and flavorful slow cooker chicken dish infused with lemon and herbs, perfect for busy weeknights or cozy dinners.

  • 1/4 cup fresh lemon juice
  • 2 tablespoons olive oil
  • 2 teaspoons dried oregano
  • 2 teaspoons dried thyme
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Mix the Lemon Herb Marinade: In a bowl, mix together the lemon juice, olive oil, oregano, thyme, garlic, salt, and pepper.
  2. Prepare the Chicken for Cooking: Place the chicken breasts in the slow cooker and pour the lemon herb mixture evenly over them.
  3. Slow Cook to Perfection: Cover and cook on low for 6-7 hours or high for 3-4 hours until the chicken is tender and juicy.
  4. Shred the Chicken: Once cooked, shred the chicken with two forks right inside the slow cooker.
  5. Serve and Garnish: Serve the chicken hot and garnish with freshly chopped parsley.
