  • 2 lemons (zested and juiced)
  • 3 tablespoons olive oil
  • 4 cloves garlic (minced)
  • 1 tablespoon fresh rosemary (chopped)
  • 1 tablespoon fresh thyme (chopped)
  • Salt and pepper to taste

Instructions

  1. Mix the Marinade: In a bowl, mix lemon juice, lemon zest, olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and pepper until all ingredients are well combined.
  2. Marinate the Chicken: Place the chicken breasts in a resealable plastic bag and pour the marinade over the chicken. Seal the bag tightly and give it a gentle shake.
  3. Preheat the Grill or Oven: Preheat your grill or oven to 375°F (190°C).
  4. Prepare the Chicken for Cooking: Remove the chicken from the marinade and discard the marinade.
  5. Grill or Bake the Chicken: Cook the chicken for 20-25 minutes or until it’s fully cooked through, reaching an internal temperature of 165°F (74°C).
  6. Let it Rest: Once out, let the chicken rest for a few minutes before serving.

Notes

This dish stores well in an airtight container in the refrigerator for up to 4 days. Marinate for at least 30 minutes, but 2 hours is recommended for the best flavor.
