A delightful side dish that brings brightness and flavor to any meal with roasted broccoli, lemon, garlic, and Parmesan.

Ingredients

  • 1 lb broccoli florets
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Zest of 1 lemon
  • 2 tbsp fresh lemon juice
  • 1/4 tsp red pepper flakes (optional)
  • Salt, to taste
  • Pepper, to taste
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh parsley, chopped for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Combine the broccoli florets with minced garlic, olive oil, lemon zest, lemon juice, red pepper flakes, salt, and pepper in a large mixing bowl. Toss to coat.
  3. Spread the broccoli mixture on a baking sheet lined with parchment paper in a single layer.
  4. Roast in the preheated oven for 20-25 minutes, stirring halfway through.
  5. Add grated Parmesan cheese over the broccoli during the last 5 minutes of roasting, if desired.
  6. Garnish with freshly chopped parsley and serve hot.
