Lemon Garlic Chicken

A cozy, flavorful dish with crispy chicken thighs, infused with lemon and garlic, perfect for weeknight dinners.

Ingredients

  • 4 pieces chicken thighs bone-in skin-on
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 1 teaspoon dried oregano
  • 1/2 cup chicken broth
  • 2 tablespoons butter

Instructions

  1. Pat the chicken thighs dry and season both sides with salt and black pepper.
  2. In a large ovenproof skillet, heat the olive oil over medium-high heat until shimmering.
  3. Add the chicken thighs skin-side down and cook for 5–6 minutes until the skin is golden brown. Flip and cook for another 3 minutes.
  4. Remove the chicken from the skillet and set aside on a plate.
  5. Reduce heat to medium, add the minced garlic to the skillet, and sauté for 30 seconds until fragrant.
  6. Stir in the lemon juice, lemon zest, dried oregano, and chicken broth, scraping up any brown bits from the bottom of the pan.
  7. Return the chicken thighs to the skillet, spooning some sauce over the top.
  8. Transfer the skillet to a preheated oven at 375°F (190°C) and bake for 20 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
  9. Remove from the oven, add the butter to the sauce, and stir until melted and well combined.
  10. Spoon the sauce over the chicken and serve immediately.

Notes

Allow chicken to rest for a few minutes after baking for extra juiciness. Use fresh lemon and garlic for best results.
