  • 1 cup breadcrumbs
  • 1/2 cup grated Romano cheese
  • 2 eggs
  • 1/4 cup all-purpose flour
  • 1 lemon (juiced and zested)
  • Salt and pepper to taste
  • Olive oil for frying
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix together the breadcrumbs and grated Romano cheese in a shallow dish.
  3. Beat the eggs with the lemon juice and zest in another dish.
  4. Season the chicken breasts liberally with salt and pepper.
  5. Dredge each chicken breast in the flour, shaking off any excess.
  6. Dip the floured chicken in the egg mixture, letting the excess drip off.
  7. Coat the chicken breast in the breadcrumb mixture, pressing gently to ensure it sticks.
  8. Heat olive oil in a large skillet over medium heat.
  9. Cook the chicken for about 4-5 minutes on each side until golden brown.
  10. Transfer the chicken to a baking dish and bake for 15-20 minutes until cooked through.
  11. Garnish with fresh parsley if desired and serve.
