  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 1 cup buttermilk
  • 1 cup fresh blueberries
  • Zest of 1 lemon
  • 2 tablespoons fresh lemon juice

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Whisk together the flour, baking powder, salt, and sugar in a large bowl.
  3. Combine the melted butter, buttermilk, lemon zest, and lemon juice in another bowl.
  4. Mix the wet ingredients into the dry ingredients, being careful not to overmix; fold in the blueberries gently.
  5. Pour half of the melted butter into a baking dish and spread it out.
  6. Spoon the biscuit batter into the dish, making sure it’s evenly distributed.
  7. Pour the remaining melted butter over the top of the biscuit batter.
  8. Bake for 20-25 minutes, or until golden brown and crispy on the edges.
