A quick and flavorful one-pan dish inspired by the vibrant street food of Seoul, featuring ground turkey and gochujang.

Ingredients

  • 1 lb lean ground turkey
  • 1 cup white or brown rice
  • 2 cups water or broth
  • 2 tablespoons gochujang
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 cup mixed vegetables (like bell peppers, carrots, and broccoli)
  • 2 green onions, chopped
  • Salt and pepper to taste
  • Sesame seeds for garnish

Instructions

  1. Heat the sesame oil in a large skillet over medium heat until it shimmers.
  2. Add the ground turkey, breaking it up with a spatula, and cook until browned.
  3. Stir in the gochujang and soy sauce, ensuring turkey is well coated.
  4. Add the rice and water (or broth), stirring to combine.
  5. Bring to a boil, then reduce the heat, cover, and let simmer for 18-20 minutes.
  6. Add the mixed vegetables and cook for an additional 5 minutes.
  7. Season with salt and pepper to taste.
  8. Garnish with chopped green onions and sesame seeds before serving.
