A refreshing twist on traditional Key Lime Pie in a convenient yogurt bark form that’s healthy and easy to make.

Ingredients

  • 2.5 cups Greek yogurt (plain, non-fat or low-fat)
  • 3.5 tbsp key lime juice
  • 2 tbsp powdered swerve (or substitute 1 tbsp honey)
  • 1 teaspoon vanilla extract
  • 1 tablespoon lime zest
  • 1/3 cup crushed gluten-free graham crackers
  • 1/4 cup toasted coconut (unsweetened)
  • 1 scoop vanilla protein powder (regular or dairy-free)

Instructions

  1. Mix the Greek yogurt, key lime juice, protein powder, lime zest, powdered swerve, and vanilla extract in a medium mixing bowl until smooth.
  2. Line a baking sheet with parchment paper or a silicone mat.
  3. Spread the yogurt mixture evenly over the prepared baking sheet, aiming for a thickness of about 1/2 inch.
  4. Sprinkle the crushed graham crackers, toasted coconut, and extra lime zest evenly on top.
  5. Freeze the mixture for at least 2-3 hours until fully set.
  6. Break the frozen bark into pieces and enjoy or store in an airtight container in the freezer for up to 2 weeks.

Notes

For extra creaminess, use full-fat Greek yogurt. Adjust sweetness to taste during mixing.
