A low-carb twist on the classic Reuben sandwich, featuring crispy cheese wraps around savory corned beef and tangy sauerkraut.

Ingredients

  • 2 cups shredded Swiss cheese
  • 1/2 pound sliced corned beef deli meat
  • 1 cup sauerkraut
  • 1/4 cup mayonnaise
  • 1 tsp Worcestershire sauce
  • 1 1/2 tbsp sugar-free ketchup
  • 2 tsp Swerve confectioner’s sugar substitute
  • 1 tbsp horseradish sauce
  • 1 pinch paprika

Instructions

  1. Preheat your oven to 400°F.
  2. Arrange the shredded Swiss cheese into eight circles on a parchment-lined baking sheet.
  3. Bake for 6-8 minutes until the edges are golden and crispy.
  4. Mix together the mayonnaise, Worcestershire sauce, sugar-free ketchup, Swerve sweetener, horseradish sauce, and paprika in a bowl.
  5. Top each cheese circle with layers of corned beef, sauerkraut, and drizzle the dressing.
  6. Fold the edges of the cheese around the filling before it hardens.
  7. Cool for a few minutes to allow the roll-ups to crisp up.
