A refreshing Kale Caesar Pasta Salad with crispy chickpeas, vibrant kale, and creamy Caesar dressing, perfect for summer gatherings or weeknight dinners.

Ingredients

  • 2 cups kale, chopped
  • 1 cup pasta (like penne or rotini)
  • 1 can chickpeas, rinsed and drained
  • 1/2 cup Caesar dressing
  • Parmesan cheese, for serving
  • Salt and pepper, to taste
  • Olive oil

Instructions

  1. Cook the pasta according to package instructions. Once done, drain it and let it cool.
  2. Preheat your oven to 400°F (200°C) while the pasta cools.
  3. Roast the chickpeas by tossing them with olive oil, salt, and pepper, then spread on a baking sheet and roast for 20-25 minutes until golden brown and crispy.
  4. Massage the chopped kale with the Caesar dressing in a large bowl to soften and infuse with flavor.
  5. Combine the cooled pasta and roasted chickpeas into the bowl with kale and mix gently.
  6. Garnish with a sprinkle of Parmesan cheese before serving.

Notes

For extra flavor, try adding red pepper flakes to the chickpeas before roasting. Adjust the Caesar dressing to taste.
