A vibrant pasta salad that combines cheese tortellini, salami, ham, and fresh vegetables, dressed with Italian flavor.

Ingredients

  • 4 oz salami, diced
  • 4 oz cooked ham, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumbers, diced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup black olives, sliced
  • 1/2 cup pepperoncini, sliced
  • 1/2 cup Italian dressing
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the cheese tortellini according to package instructions. Once tender, drain and let cool in a colander.
  2. Combine the cooled tortellini, diced salami, diced ham, halved cherry tomatoes, diced cucumbers, thinly sliced red onion, sliced black olives, and pepperoncini in a large bowl.
  3. Drizzle the Italian dressing over your vibrant mixture, tossing gently to combine all the ingredients.
  4. Season with salt and pepper to taste, adjusting as needed for that perfect balance of flavors.
  5. Refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld beautifully together.
