Italian Chicken Ciabatta Sandwich

A flavorful sandwich featuring grilled chicken, creamy cheese, and vibrant greens, inspired by Italian cuisine.

Ingredients

  • 2 ciabatta rolls (or 1 large loaf, halved)
  • 2 grilled or pan-seared chicken breasts, sliced
  • 4 slices mozzarella or provolone cheese
  • 1 roasted red pepper, sliced (jarred works great)
  • 1/2 cup fresh arugula or spinach
  • 1–2 tablespoons pesto (store-bought or homemade)
  • Optional: balsamic glaze or a drizzle of olive oil
  • Salt & pepper, to taste
  • Olive oil, for grilling bread

Instructions

  1. Preheat a grill or skillet over medium heat.
  2. Lightly brush the ciabatta rolls or bread with olive oil.
  3. Place them on the grill and toast until crispy and golden brown.
  4. Once your chicken breasts are cooked, slice them and layer generously onto the bottom half of each ciabatta roll.
  5. Place slices of mozzarella or provolone cheese on top of the chicken.
  6. Top your sandwich with the roasted red pepper, fresh arugula, and pesto.
  7. Sprinkle with salt and pepper to taste, and if you wish, drizzle with balsamic glaze or olive oil.
  8. Close up your sandwich with the top half of the ciabatta roll, pressing it down gently.
  9. Carefully cut the sandwich in half and serve warm.
