Delightfully crispy and juicy chicken cutlets infused with fragrant basil and Italian herbs, perfect for any occasion.

Ingredients

  • 4 chicken breasts
  • 1 cup fresh basil, chopped
  • 1 cup breadcrumbs
  • 2 teaspoons Italian herbs (oregano, thyme, etc.)
  • Salt and pepper to taste
  • 1 egg (for egg wash)
  • 1/2 cup olive oil (for frying)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place the chicken breasts between two sheets of plastic wrap or wax paper and pound them to an even thickness, about 1/2 inch.
  3. Mix together the breadcrumbs with the Italian herbs, salt, and pepper in a bowl.
  4. Dip each pounded chicken breast into the egg, coating both sides thoroughly.
  5. Dredge the egg-dipped cutlet in the breadcrumb mixture, pressing down slightly.
  6. Heat olive oil in a skillet over medium heat and fry the cutlets until golden brown, about 3-4 minutes per side.
  7. Transfer the cutlets to a baking sheet and bake for about 10 minutes until fully cooked, reaching an internal temperature of 165°F (75°C).

Notes

Serve with spaghetti, salad, or roasted vegetables. Leftover cutlets can be stored in the fridge for up to 3 days.
