This one-pan delight brings together the succulent taste of chicken, the sweet tang of pineapple, and the wholesome heartiness of rice.

Ingredients

  • 1 lb chicken breast, diced
  • 1 cup pineapple chunks (fresh or canned)
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup soy sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Brown the diced chicken, sautéing until cooked through.
  3. Sauté the chopped onion, bell pepper, and minced garlic until aromatic.
  4. Mix in the pineapple chunks and cooked rice.
  5. Pour the soy sauce over the mixture and combine well.
  6. Season with salt and pepper to taste.
  7. Heat the mixture for an additional 2-3 minutes until heated through.
  8. Garnish with fresh green onions before serving.

Notes
